Walls, Then Cabinets
Drywall and paint, then cabinets set level and secured, usually before the finished floor.
Counters, Backsplash, Fixtures
Counters are templated after the cabinets are set, then installed, followed by backsplash, appliances, and fixtures.
Floors or Cabinets First?
In most kitchens, cabinets go in before the finished floor. That protects the new floor from the heavy install work, lets the installer shim cabinets level over an uneven subfloor, and saves flooring material under cabinets where no one will ever see it.
There are exceptions. Large-format tile, polished concrete, and some hardwood floors look best as one unbroken run, so they sometimes go down first and the cabinets sit on top. We decide that with you at the design stage, because it changes the schedule and the material order.

In California a B-2 Residential Remodeling licence does not cover load-bearing structural work, so ask who is licensed to do that part before you sign.
